Product Description: Precisely cut from the short loin of the naturally bred grass-fed Black Angus cattle, the T-Bone Steak includes a “T”-shaped lumbar vertebra with sections of abdominal internal oblique muscle on each side. T-bone steaks are cut closer to the front and contain a smaller section of tenderloin. These are suited to fast, dry heat cooking methods such as broiling and grilling. They contain collagen in small quantities when compared to other cuts which makes it easier for them to cook.
